Shrimp and Butternut Squash Fettuccine

  1. Cook fettucine according to package directions.
  2. Meanwhile, heat the oil in a saute pan over medium heat and saute squash until nicely browned.
  3. In a sauce pan, reduce Madeira by half (takes about 5 minutes).
  4. Add shrimp to the saute pan with squash and saute for 2 minutes.
  5. Add the reduced Madeira, thyme and butter.
  6. Toss with the pasta and serve.
