Italian Roast Beef
- 4 pounds beef rump roast
- 2 each onions
- 2 each garlic cloves
- 1 each celery stalk
- 2 ounces salt pork or bacon
- Trim all excess fat from roast.
- Mince 1 onion, the garlic, celery and salt pork.
- Lightly flour roast; rub with minced mixture.
- Slice remaining onion place in crockpot.
- Place roast on onion.
- Cover and cook on low setting for 10 to 12 hours.
