Salmon Quesadillas
- 2 teaspoons Minced Garlic
- 1 teaspoon Canola Oil
- 2 packages Salmon, 6oz Each, Ready To Eat Pouches, Drained. OR 1 1/2 Cups Cooked, Flaked Salmon(skin And Bones Removed).
- 2 teaspoons Dried Basil
- 1/2 teaspoons Ground Black Pepper
- 4 Tablespoons Butter, Softened
- 1 package Flour Tortillas, 8-10 Package
- 2 cups Shredded Mozzarella Cheese
- When I make this recipe, I like to make extra so I double all of the ingredients except for the garlic and basil.
- In a medium skillet over medium heat, saute garlic in canola oil until tender.
- Stir in salmon, basil and pepper.
- Cook over medium heat until heated through.
- Spread butter over one side of each tortilla.
- Place butter side down in another, preheated skillet.
- Sprinkle 3 Tablespoons of salmon mixture and 1/4 cup cheese over half of each tortilla.
- Fold tortilla in half and cook over medium low heat for 3-4 minutes on each side or until cheese is melted.
- Cut into wedges and serve with salsa and/or sour cream if desired.
- Enjoy!
