Salmon Quesadillas

  1. When I make this recipe, I like to make extra so I double all of the ingredients except for the garlic and basil.
  2. In a medium skillet over medium heat, saute garlic in canola oil until tender.
  3. Stir in salmon, basil and pepper.
  4. Cook over medium heat until heated through.
  5. Spread butter over one side of each tortilla.
  6. Place butter side down in another, preheated skillet.
  7. Sprinkle 3 Tablespoons of salmon mixture and 1/4 cup cheese over half of each tortilla.
  8. Fold tortilla in half and cook over medium low heat for 3-4 minutes on each side or until cheese is melted.
  9. Cut into wedges and serve with salsa and/or sour cream if desired.
  10. Enjoy!
