Chicken Confetti

  1. Wash chicken pieces and pat dry.
  2. Season chicken with 1 tsp (5 ml) salt & 1/8 tsp (1 ml) pepper.
  3. In large.
  4. skillet or Dutch oven, brown chicken in oil.
  5. Remove chicken.
  6. Pour off all but 3 tbsp (45 ml) oil.
  7. Add onion & garlic to oil, stir until onion is tender.
  8. Stir in chicken & remaining ingredients, except spaghettti and cheese.
  9. Cover tightly and cook slowly for 1-11/2 hours or until tender-stir occasionally.
  10. Serve over spaghetti.
  11. Top with cheese if desired.
  12. **NOTE:You can also cook the chicken and sauce in a crock-pot on low 8-10 hours.
