Berry Ice Cream Log
- 250g block PHILADELPHIA Cream Cheese, softened
- 2/3 cup caster sugar
- 1 cup evaporated milk, chilled
- 1 teaspoon vanilla essence
- 2 x 55g egg whites, stiffly beaten
- 1 cup frozen or fresh berries (eg Safeway 1 lb For $3.99 thru 02/09
- blackberries, strawberries, raspberries) Safeway 1 lb For $3.99 thru 02/09
- Beat Philly* until smooth.
- Beat in the sugar, milk and vanilla essence.
- Fold in egg whites.
- Pour mixture into a 5-6 cup Kugelhopf mould, freeze for 1 hour.
- Sprinkle berries over mixture and gently press in.
- Cover and return to freezer until firm.
- Cut into wedges to serve.
