Apricot Up Side Down Cake Recipe

  1. Preheat oven to 350 degrees.
  2. Combine apricots, lemon juice, brown sugar, and cinnamon.
  3. Spread on bottom of non-stick small baking dish.
  4. Combine crumbs, baking pwdr, and salt.
  5. Beat egg yolks.
  6. Gradually beat in sugar till yolks are thick and lemon colored.
  7. Beat in water, bread crumb mix and extract.
  8. Beat egg whites with a healthy pinch of salt till stiff, not dry.
  9. Fold into egg mix.
  10. Spoon over apricots.
  11. Bake for 25 min or possibly till cooked throughout.
  12. 2 servings.
