Carmelized Red Onion Dip
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 large red onion, chopped
- 1 (8 ounce) package cream cheese, softened
- 14 cup mayonnaise
- 1 tablespoon chopped fresh thyme
- 1 tablespoon chopped fresh chives
- 1 tablespoon chopped shallot
- 1 tablespoon hot sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon fresh ground black pepper
- 1 (16 ounce) containerfresh ricotta cheese
- 6 slices pancetta, cooked and crumbled
- In a medium saucepan over medium heat, heat olive oil.
- Add butter, and heat until melted.
- Add onion, and cook, stirring occasionally, for about 15 minutes, or until tender and lightly browned.
- Remove from heat, and let cool completely.
- In the work bowl of a food processor, pulse cream cheese until smooth.
- Add mayonnaise, thyme, chives, shallot, hot sauce, ad Worcestershire Sauce; pulse until combined.
- Add caramelized onion, salt, and pepper; pulse until combined.
- Transfer mixture to a serving bowl, and stir in cheese and pancetta.
- Garnish with fresh chopped chives and thyme.
- Store, refrigerated, in an airtight container for up to 3 days.
