Lemon-Basil Quinoa
- 1-1/2 cups water
- 3/4 cup quinoa, uncooked, rinsed
- 2 Tbsp. Miracle Whip Calorie-Wise Spread
- 2 Tbsp. Kraft Extra Virgin Olive Oil Tuscan Italian Dressing
- 2 Tbsp. fresh lemon juice Safeway 4 ct For $5.00 thru 02/09
- 2 cups cherry tomatoes, halved
- 1 cup chopped seeded peeled English cucumbers
- 8 green onions, sliced
- 1/2 cup chopped fresh basil
- Bring water to boil in small saucepan.
- Add quinoa; cover.
- Simmer on low heat 15 min.
- Remove from heat.
- Let stand 5 min.
- Spoon into large bowl.
- Refrigerate 1 hour.
- Meanwhile, mix Miracle Whip, Italian dressing and lemon juice until blended.
- Refrigerate until ready to use.
- Fluff quinoa with fork.
- Add Miracle Whip mixture and remaining ingredients; mix lightly.
