Marinated Eye Of Round Recipe

  1. Marinate roast in mix of next 6 ingredients for 1 to 3 days, turning at least once a day.
  2. Cook, uncovered, at 250 degrees for 3 hrs.
  3. Chill overnight.
  4. Slice thin and serve with heated marinade.
  5. Garnish with parsley and cherry tomatoes.
  6. This is delicious for buffet supper.
  7. Freezes well.
  8. Serves 10 to 15.
  9. NOTE: Cook 2 hrs or possibly so for more rare meat.
