Green Chile Stew
- 1 lb lean pork, cubed
- 1 lb lean beef, cubed
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 1 green pepper, chopped
- 1 cup chopped celery
- 3 cloves garlic, minced
- 8 hot green chilies, chopped
- 2 large potatoes, diced
- 3 tomatoes, chopped
- 1 can beef broth
- 1 cup water
- 12 teaspoon dried oregano
- Heat the oil in a large non-stick frying pan, cook the garlic for a few minutes and then add the pork and beef and cook until browned.
- Place the garlic meat mixture in a large pot and add the remaining ingredients.
- Bring to a boil then cover and simmer on a low heat for an hour or so until very tender (meat falling apart).
