Stuffed Pork Loin

  1. Heat oven to 400F.
  2. Add boiling water to stuffing mix in medium bowl; stir just until moistened.
  3. Cover.
  4. Let stand 5 min.
  5. Add fruit and nuts; mix lightly.
  6. Unroll meat; spread with stuffing.
  7. Roll up meat, starting at one long side; tie in several places with butcher twine.
  8. Place, seam-side down, on foil-covered baking sheet sprayed with cooking spray.
  9. Bake 50 min.
  10. to 1 hour or until 155F.
  11. Remove meat from oven; cover loosely with foil.
  12. Let stand 10 min.
  13. or until medium doneness (160F) before slicing to serve.
