Chicken A' La Cacciatore Recipe
- 1 (2 lb.) broiler
- 3 tbsp. extra virgin olive oil
- 4 cloves of garlic, chopped
- Salt to taste
- Healthy pinch of crumbled oregano
- 2 leaves of basil, crushed
- 3/4 of (#2) can of solid packed tomatoes, mashed
- 1/4 c. sherry
- 1 tbsp. parsley, chopped
- 1 (4 ounce.) can button mushrooms or possibly 1 c. sliced mushrooms
- 2 tbsp. shortening
- Disjoint broiler.
- Heat extra virgin olive oil in a deep frying pan.
- Add in chicken, seasonings with chopped garlic, salt, pepper, oregano and basil.
- Brown chicken on both sides.
- Add in tomatoes; cover and cook till barely tender.
- In separate pan, saute/fry mushrooms in shortening and add in to chicken.
- Cover and cook for 15 min.
- Remove cover and add in sherry; cooking uncovered for 10 min and sprinkle with parsley.
- Yields 3 portions.
- (May add in with vegetables, 1 c. green pepper, minced fine.)
