Pizza Puffs
- 3/4 cups Flour
- 3/4 teaspoons Baking Powder
- 1/4 teaspoons Oregano
- 1/4 teaspoons Crushed Red Pepper
- 3/4 cups Whole Milk
- 1 Egg, Lightly Beaten
- 6 ounces, weight Mozzarella Cheese, Shredded
- 4 ounces, weight Pepperoni, Cubed
- 1/2 cups Pizza Sauce
- Preheat the oven to 375 degrees F. Grease a 24-cup mini-muffin pan.
- In a large bowl, whisk together the flour, baking powder, oregano and red pepper.
- Whisk in the milk and egg.
- Stir in 1 cup of the mozzarella cheese and all of the pepperoni.
- Let stand for 10 minutes.
- Stir the batter and divide among the mini-muffin cups.
- Bake until puffed and golden, 20 to 25 minutes.
- Meanwhile, microwave the pizza sauce until warmed through.
- When you pull them out of the oven, sprinkle the puffs with remaining mozzarella cheese.
- Serve the puffs with the pizza sauce for dipping.
- Freeze baked puffs in a single layer on a baking sheet.
- Then once frozen, transfer to a freezer bag.
- To reheat, bake the frozen puffs on a baking sheet in a 350 F oven for 8-10 minutes.
