Chocolate Peppermint Sandwich Cookies

  1. Heat oven to 350 degrees F.
  2. Beat cake mix, eggs and oil in large bowl with mixer until blended; roll into 48 (1-inch) balls.
  3. Place, 2 inches apart, on parchment-covered baking sheets.
  4. Bake 8 min.
  5. or until centres are set.
  6. Cool on baking sheets 3 min.
  7. Remove to wire racks; cool completely.
  8. Melt chocolate as directed on package.
  9. Add cream cheese and extract; beat until blended.
  10. Gradually add sugar, beating well after each addition.
  11. Spread about 2 tsp.
  12. cream cheese mixture onto bottom side of each of 24 cookies; cover with remaining cookies, top sides up.
  13. Roll edges of cookies in crushed candy.
