Ms. Kipper's Tamarind Sauce
- 1 tbsp oil or ghee
- 1 tsp cumin seeds
- 1 tsp ground ginger
- 1/2 tsp ground cayenne pepper
- 1 tsp fennel seeds
- 1/2 tsp asafoetida powder
- 1/2 tsp garam marsala
- 2 cup water
- 1 1/4 cup white sugar
- 3 tbsp tamarind paste
- 1 cup brown sugar
- put oil in saucepan
- add spices.
- I tend to put all my spices in a bowl before I start so I'm ready to go.
- cook the spices for 2 minutes.
- keep on medium low..
- add the water, sugar, and tamarind paste.
- turn heat up to medium high and allow it to bubble.
- turn down to medium and allow it to cook down for about 25 - 30 minutes.
- it should thicken as it cooks.
- when it was done I allowed it to cool before I put it in glass jars.
