Ms. Kipper's Tamarind Sauce

  1. put oil in saucepan
  2. add spices.
  3. I tend to put all my spices in a bowl before I start so I'm ready to go.
  4. cook the spices for 2 minutes.
  5. keep on medium low..
  6. add the water, sugar, and tamarind paste.
  7. turn heat up to medium high and allow it to bubble.
  8. turn down to medium and allow it to cook down for about 25 - 30 minutes.
  9. it should thicken as it cooks.
  10. when it was done I allowed it to cool before I put it in glass jars.

oil, cumin seeds, ground ginger, ground cayenne pepper, fennel seeds, asafoetida powder, garam marsala, water, white sugar, tamarind, brown sugar
