Petite Cherry Cheese Cup Cakes
- 1 lb. cream cheese, softened
- 3/4 cup sugar
- 2 eggs
- 1 tbsp. lemon juice
- 1 tsp. vanilla
- 24 vanilla wafers
- 1 can (1-1/3 lb.) can cherry pie filling
- Beat first 5 ingredients until light and fluffy.
- Line small muffin tins with paper baking cups and place a vanilla wafer in the bottom of each.
- Fill cups 2/3 full with cream cheese mixture.
- Bake at 375 F. for 15 to 20 minutes until set.
- Top each with 1 Tablespoon cherry pie filling.
- Chill.
- Yield: 24 cakes.
