Chocolate Coca-Cola Cake
- 2 sticks unsalted butter, room temperature
- 1-1/2 cup sugar
- 2 eggs
- 2 tbsp. unsweetened cocoa powder
- 2 tsp. vanilla
- 1/4 tsp. salt
- 1/2 cup buttermilk
- 1 tsp. baking soda
- 2-1/2 cup flour
- 1 cup Coca-Cola
- Heat oven to 350F.
- Generously butter a 13x9-inch baking pan.
- In a mixer bowl cream butter and sugar until light.
- Add eggs, one at a time, beating until blended.
- Add cocoa, vanilla and salt.
- Beat until blended.
- In a small bowl combine buttermilk and baking soda, whisk until blended.
- Reduce mixer speed to low.
- Add flour alternately with 1 cup Coke, beginning and ending with flour, beating at low speed after each addition until well blended.
- Pour into prepared pan.
- Bake 30-35 minutes or until cake begins to pull away from sides of pan.
- Do not overbake.
- Cool on a wire rack.
