Thanksgiving Bites over Fresh Cranberry Sauce

  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, thoroughly combine all of the meatball ingredients, form into your preferred size meatballs, and line them up on a rimmed baking sheet.
  3. Place in oven and cook uncovered for 40 minutes, until the chicken is thoroughly cooked and the meatballs are golden brown.
  4. While the meatballs are baking, prepare the cranberry sauce.
  5. Place the cranberries, water, and sugar in a medium saucepan over medium-low heat.
  6. Using a whisk, combine ingredients.
  7. Bring to a boil and whisk again.
  8. Continue to cook for an additional 10 minutes until the cranberries have burst and the sauce is formed.
  9. Remove from heat.
  10. To plate, place desired amount of cranberry sauce on the plate and top with meatballs.
