Apple-Oat Bran Scones

  1. Preheat oven to 425 degrees; grease a large baking sheet.
  2. In a large bowl, combine flour, cereal, baking powder, cinnamon and salt.
  3. In a medium bowl, beat together milk, oil, sugar and egg.
  4. Add to dry ingredients along with chopped apple; mix lightly with a fork until mixture clings together and forms a soft dough.
  5. Turn dough out onto a lightly floured surface and knead gently 5 or 6 times.
  6. Divide dough in half.
  7. With a lightly floured rolling pin, roll one half of the dough into a 7-inch round; cut into 4 wedges.
  8. Repeat with remaining dough.
  9. Place scones one inch apart on prepared pan.
  10. Pierce tops with the tines of a fork.
  11. Brush tops with melted butter and sprinkle with additional cinnamon, if desired.
  12. Bake for 15 to 18 minutes, or until golden brown.
  13. Serve warm.
