Rhubarb Pudding

  1. Preheat oven to 350F.
  2. Grease a 9x9-inch baking pan and set aside.
  3. Mix together rhubarb and sugar; set aside.
  4. Mix remaining ingredients in bowl and add rhubarb mixture.
  5. Pour into greased pan.
  6. Bake for 30 minutes.
  7. Check with toothpick for doneness.
  8. Serve hot or cold with cream, whipped cream, or ice cream as desired.
