Easy Shrimp Jambalaya
- 4 slices side bacon, diced
- 1 onion, chopped
- 1 green pepper, cut into thin strips
- 1/2 tsp. dried thyme leaves
- 1/2 tsp. cumin
- 1 cup long-grain white rice
- 1 can (10 oz) condensed tomato soup
- 1 1/2 cups water
- 1/4 tsp. hot pepper sauce
- 1/2 lb. frozen, precooked shrimp, thawed Safeway 1 lb For $8.99 thru 02/09
- Brown bacon in large frypan over medium-high heat.
- Remove from pan and set aside.
- Cook onion and green pepper in bacon drippings for 3 minutes.
- Drain fat.
- Stir IN rice, thyme and cumin.
- Cook for 1 minute.
- Add soup, water and hot pepper sauce, stir until smooth.
- Bring to boil, cover and simmer over low heat 20 minutes.
- Add shrimp and bacon.
- Cover and cook 5 minutes longer.
