Potato Avocado Salad Recipe

  1. Boil potatoes; peel and cube.
  2. Put in a bowl.
  3. Peel and chop avocados, chop green onions and add in to potatoes.
  4. Toss with oil, vinegar and pepper.
  5. Refrigerateseveral hrs.
  6. When ready to serve add in lemon juice to mayonnaise and add in to salad with coarsely minced Large eggs.
  7. Blend.
  8. Add in salt to taste if you like.
