Noodle Pudding

  1. Preheat oven to 350 degrees F. Grease a 13 by 9 by 2 inch pan.
  2. In a large bowl whisk the eggs, sour cream, melted butter/margarine, vanilla, lemon juice, and sugar until blended.
  3. Gently fold in the raisins, sliced apples, and cooked noodles.
  4. Pour the mixture into the greased pan, using a rubber spatula to even out the surface.
  5. Sprinkle with cinnamon.
  6. Bake 1 hour and twenty minutes or until golden brown.
  7. Let cool before cutting into squares.
  8. Can be served cold or at room temperature.
