Tricia's Pineapple Crisp

  1. Preheat oven to 425F
  2. Skin, core, and chop a fresh pineapple into chunks
  3. In a small mixing bowl add pineapple, 3 tablespoons flour, and 3 tablespoons brown sugar.
  4. Stir until pineapple is evenly covered and pour into an 8x8 baking dish
  5. In a clean mixing bowl, combine the remainder of the flour and sugar.
  6. Cut butter into mixture until it resembles peas.
  7. Top pineapple with the crumb topping mixture.
  8. Lighty cover with foil and bake for 40 minutes.
  9. Remove foil and bake an additional 10 minutes
