Beef Stew
- 1/2 lb. ground beef
- 1/4 lb. bulk pork sausage
- 1/2 c. soft bread crumbs
- 1/4 tsp. dried oregano
- 1 egg
- 2 Tbsp. oil
- 1 can beef gravy (14 oz.)
- 1 can stewed tomatoes (8 oz.)
- 3 c. potatoes, peeled and cut in 1-inch cubes
- 1 c. sliced carrots
- 1/2 c. chopped onion
- 1 bay leaf
- 1/4 tsp. pepper
- 1 c. frozen peas, thawed
- In medium bowl, mix thoroughly beef, sausage, bread crumbs, oregano and egg.
- Shape into 12 meatballs.
- In 4-quart saucepan over medium heat, in hot oil, brown meatballs on all sides.
- Spoon off fat.
- Add gravy, tomatoes, potatoes, carrots, onion, bay leaf and pepper.
- Heat to boiling, stirring occasionally.
- Reduce heat to low.
- Cover; simmer 25 minutes.
- Stir in peas; cook 5 minutes more.
- Remove bay leaf.
- Makes 6 servings.
