Calypso Kielbasa
- 1 pound polish kielbasa sausage sliced
- 1 whole yellow onion medium slices
- 6 whole serrano chiles sliced
- 1/2 x sweet yellow bell peppers medium slices
- 1/2 x sweet red bell peppers medium slices
- 1 whole habanero chili peppers very finely diced
- 20 ounces pineapple chunks reserving half of juice
- 15 ounces black beans rinsed and drained
- 13 cup brown sugar, light more or less to taste
- 1 tablespoon olive oil, extra-virgin
- 1 pinch red pepper flakes
- 1 pound egg noodles
- Heat olive oil and add red pepper flakes in a large skillet
- Brown kielbasa on both sides in olive oil, and pepper flakes
- Add peppers and onion to skillet.
- Saute until peppers sbegin to soften
- Add reserved pineapple juice and brown sugar and black beans to skillet.
- Reduce heat to simmer, and simmer for about 20 minutes.
- Add pineapple chunks.
- Cook down until you have desired sauce consistency
- Prepare egg noodles according to package directions.
- Drain
- Serve kielbasa mixture over egg noodles.
