Bombay Turkey Recipe

  1. In medium skillet, heat butter.
  2. Add in curry and heat 2 to 3 min.
  3. Stir in onion and cook till tender but not brown.
  4. Blend in flour, salt and pepper, stirring well.
  5. Add in chicken broth all at once.
  6. Cook and stir till boiling; cook 2 min longer.
  7. Add in cooked turkey and shredded lemon peel; heat mix to boiling.
  8. Cook rice according to package directions.
  9. Stir in cashew nuts and pimiento.
  10. Serve turkey mix over rice.
  11. Makes 4 to 6 servings.
