Bombay Turkey Recipe
- 4 tbsp. butter
- 2 - 3 teaspoon curry pwdr
- 1/2 c. minced onion
- 3 tbsp. all purpose flour
- 1/4 teaspoon salt
- Dash pepper
- 1 1/2 c. chicken broth
- 2 c. diced cooked turkey (or possibly chicken)
- 1 teaspoon shredded lemon peel
- 2/3 c. long grain rice
- 1/4 c. minced cashew nuts
- 2 tbsp. minced, canned pimiento
- In medium skillet, heat butter.
- Add in curry and heat 2 to 3 min.
- Stir in onion and cook till tender but not brown.
- Blend in flour, salt and pepper, stirring well.
- Add in chicken broth all at once.
- Cook and stir till boiling; cook 2 min longer.
- Add in cooked turkey and shredded lemon peel; heat mix to boiling.
- Cook rice according to package directions.
- Stir in cashew nuts and pimiento.
- Serve turkey mix over rice.
- Makes 4 to 6 servings.
