Yummy Orange Yogurt Muffins!
- 1 cup all-purpose flour
- 34 cup whole wheat flour
- 12 cup granulated sugar
- 1 orange (including skin)
- 1 teaspoon baking powder
- 12 teaspoon baking soda
- 14 teaspoon salt
- 1 egg
- 1 cup vanilla yogurt (I use non-fat but any can be used)
- 13 cup canola oil
- 1 teaspoon vanilla
- 12 cup powdered sugar (sifted)
- 1 -2 teaspoon orange juice
- Preheat oven to 400 degrees F. Spray 18 muffin tins with non-stick spray.
- In a large mixing bowl, stir together flour, granulated sugar, baking powder, baking soda, and salt.
- Wash orange and cut in to eighths or smaller (I cut them that small to make the blending easier).
- Blend in food processor until the rind is very small.
- Add egg and blend until mixed.
- In a medium mixing bowl add orange mixture with yogurt, oil, and vanilla.
- Add egg mixture all at once to the flour mixture.
- Stir just until moistened.
- Spoon batter into prepared muffin tins, filling each three-quarters full.
- Bake in the preheated oven about 10 minutes or until tops of muffins are golden.
- Cool muffins completely before adding glaze.
- GLAZE:.
- In a small bowl, stir together powdered sugar and enough orange juice to make a glaze of drizzling consistency.
- Drizzle or brush glaze over muffins.
