English Breakfast Risotto
- 4 sausages
- 4 slices bacon
- 2 tomatoes
- 4 ounces mushrooms
- 1 onion
- 4 eggs
- 14 pint milk
- 1 tablespoon oil
- 8 ounces risotto rice
- 6 tablespoons chicken stock
- Grill sausages and bacon until brown and then cut into chunks.
- Grill mushrooms and tomatoes.
- In a frying pan, add oil and fry onion until transparent, add rice and fry some more, adding milk.
- Stir until milk is absorbed into rice.
- Add chicken stock, two tablespoons at a time, wait until nearly absorbed, then add another two tablespoons.
- Repeat until rice is cooked but still form.
- Add chopped sausage, bacon, mushrooms and tomatoes.
- Stir and cook for 2 minutes.
- Sprinkle chopped eggs on top.
