Microwave Lasagne
- 1 lb. very lean ground beef or you can use Italian sausage or 1/2 lb. beef and 1/2 lb. sausage
- 1 (8 oz.) pkg. uncooked lasagne
- 1 (32 oz.) jar spicy spaghetti sauce
- 1 tsp. salt
- 2 c. Ricotta cheese or small curd cottage cheese
- 3 c. shredded Mozzarella cheese
- 1/2 c. grated Parmesan cheese
- 1/2 c. water or beer
- pinch of anis seed, oregano and bay leaf may be added to meat
- In a 2-quart casserole, crumble up the beef and microwave for 5 to 6 minutes on High until the meat is no longer pink.
- Drain off all fat and add the spaghetti sauce, water and salt.
- Mix and again microwave on High for 5 to 6 minutes.
- In 9 x 13-inch glass baking dish, layer 1/3 of the sauce, 1/2 of the uncooked lasagna, 1 cup grated Ricotta cheese (or the small curd cottage cheese) and 1/3 of the shredded Mozzarella cheese.
- Repeat the layers ending with the sauce.
- Sprinkle on the Parmesan cheese.
- Cover with plastic wrap and microwave on High for 30 to 35 minutes.
- Remove and let stand for 5 minutes.
- Serves 6 to 8 people.
