Tuna Rice Salad
- 3 cups cooked rice
- 1 (7 ounce) canflaked tuna, drained
- 4 boild eggs (chop 2, other 2 cut into quarters set aside)
- 12 cup cooked peas
- 3 tomatoes (sliced into quarters, set one of the tometoes aside)
- 1 onion (finely chopped)
- 12 olive
- salt and pepper
- 1 tablespoon capers (optional)
- 14 cup olive oil (or less and vinegar to season)
- Combine rice, with all the ingredients below.
- Rememering to set aside the 2 eggs, and tomaoe.
- Toss everything together taste for seasoning.
- Place in a caserole glass dish (it looks more appealing.
- Decorate with the remaining eggs and tomotes all around the dish, with some of the olives also.
- You may have this salad warm in the winter and cold in the summer.
