Blueberry Oat Bran Muffins Recipe
- 1 1/3 c. oat bran
- 1 c. rolled oats
- 1/2 c. orange juice
- 3/4 c. skim lowfat milk
- 3/4 c. whole wheat flour
- 2 tbsp. brown sugar
- 1 tbsp. baking pwdr
- 1 1/2 teaspoon cinnamon
- 3/4 c. unsweetened applesauce
- 2 egg whites
- 2 tbsp. vegetable oil
- 1 1/2 c. blueberries
- Preheat oven to 400 degrees.
- Spray muffin tins with no stick cooking spray.
- In large bowl combine oat bran, rolled oats, orange juice and lowfat milk.
- In second bowl mix flour, brown sugar, baking pwdr and cinnamon.
- In third bowl combine applesauce, egg whites, oil and blueberries.
- Combine fruit mix with oat bran mix.
- Blend well.
- Add in flour mix.
- Stir till just blended.
- Fill 12 muffin tins 3/4 full.
- If you like, sprinkle tops with cinnamon/sugar.
- Bake 30 min at 400 degrees.
