Cheese and Bacon Mini Arepas with Mayo and Cilantro Dressing
- 1 cup pre-cooked white cornmeal (arepa flour)
- 1-1/4 cup water
- 1/4 teaspoon salt
- 3 tablespoons KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
- 3 tablespoons OSCAR MAYER Real Bacon Bits
- corn oil for frying
- Mayo & Cilantro Dressing
- 5 tablespoons KRAFT Real Mayo Mayonnaise
- 3 tablespoons KRAFT Classic Ranch Dressing
- A handful of fresh cilantro
- 1 tablespoon vinegar
- season as desired with salt and pepper
- Mix cornmeal and salt with the water, knead until theres no lumps and the mixtures consistency is soft and uniform.
- Add the cheese along with the bacon bits.
- Keep mixing and then start making and flattening the arepitas with the palms of your hands.
- Ideal size is 2-3 cm (diameter) and 1 cm thick.
- Place them in a cookie sheet or tray.
- Put enough oil in a deep frying pan and when it is hot, start adding the arepitas, little by little, so that all are submerged in the oil.
- Fry them until they look golden, approximately for 8 minutes.
- Tip: Dont forget to place them on paper towels to drain them of the oil excess.
- Mayo & Cilantro Dressing Blend all ingredients in a food processor or blender until a creamy green sauce forms.
- Serve in a deep dish to accompany the arepitas.
