Cheese and Bacon Mini Arepas with Mayo and Cilantro Dressing

  1. Mix cornmeal and salt with the water, knead until theres no lumps and the mixtures consistency is soft and uniform.
  2. Add the cheese along with the bacon bits.
  3. Keep mixing and then start making and flattening the arepitas with the palms of your hands.
  4. Ideal size is 2-3 cm (diameter) and 1 cm thick.
  5. Place them in a cookie sheet or tray.
  6. Put enough oil in a deep frying pan and when it is hot, start adding the arepitas, little by little, so that all are submerged in the oil.
  7. Fry them until they look golden, approximately for 8 minutes.
  8. Tip: Dont forget to place them on paper towels to drain them of the oil excess.
  9. Mayo & Cilantro Dressing Blend all ingredients in a food processor or blender until a creamy green sauce forms.
  10. Serve in a deep dish to accompany the arepitas.
