Oatmeal Muffins
- 1 cup oatmeal
- 1 cup buttermilk
- 1 cup flour
- 1 teaspoon baking powder
- 12 teaspoon baking soda
- 14 teaspoon salt
- 13 cup oil
- 12 cup brown sugar
- 1 egg
- 12 cup dried apricot, chopped
- 1 12 tablespoons sugar
- Combine oatmeal and buttermilk in medium bowl.
- Stir to mix well.
- Cover bowl and let stand 30 minutes.
- Stir together flour, baking powder, baking soda and salt in medium bowl; set aside.
- In small bowl combine oil, brown sugar and egg.
- Stir into oatmeal mixture.
- Pour oatmeal mixture into flour mixture.
- Stir just to moisten dry ingredients.
- Gently stir in apricots.
- Divide batter evenly in muffin cups, filling 3/4 full.
- Sprinkle with sugar.
- Bake @ 350 degrees 20-25 minutes.
