Waldorf Whip Salad Mold Recipe
- 1 (3 ounce.) pkg. lemon flavored gelatin
- 1 c. warm water
- 3 tbsp. lemon juice
- 1/2 c. mayonnaise
- 1 c. minced celery
- 1/2 c. minced walnuts
- 1 1/2 c. minced apples
- 2/3 c. undiluted evaporated lowfat milk
- Walnut halves
- Apple slices
- Dissolve gelatin in warm water, cold.
- Add in 1 Tbsp.
- lemon juice, mayonnaise, celery, walnuts and apples; mix well.
- Refrigeratetill mix is the consistency of unbeaten egg whites.
- Refrigerateevaporated lowfat milk in refrigerator ice cube tray till soft ice crystals form around edges (10-15 min).
- Whip till stiff (1 minute).
- Add in the remaining lemon juice.
- Whip till very stiff (1-2 min longer).
- Fold evaporated lowfat milk (whipped) into gelatin mix.
- Spoon into 5 c. mold.
- Refrigeratetill set (approximately 2 hrs).
- Unmold on salad greens.
- Garnish with walnut halves and apple slices.
- Serves 8.
- Turn an ordinary Waldorf Salad into a creamy luscious offering.
- A nutty thing to do but well worth it!
