Chickpea, Wild Rice and Bulgar Wheat Salad

  1. Soak bulgar wheat in half olive oil, juice of 2 lemons and 125ml boiling water overnight.
  2. Cook wild rice in boiling water til it begins to burst - 20 mins.
  3. Put rice, bulgar wheat and chickpeas in together.
  4. Warm ground cumin and coriander in remaining olive oil for 2 minutes.
  5. Pour over chickpeas etc.
  6. Stir in spring onions and some lemon juice.
  7. Season and serve.
