Sunshine Barley Salad
- 1-1/2 qt. cooked barley
- 1 qt. navel oranges, peeled, sectioned and cut in half King Sooper's 1 lb For $0.99 thru 02/09
- 2 cups pencil thin asparagus spears, grilled, cut diagonally into 1-inch lengths
- 1 cup grape tomatoes, cut in half King Sooper's 1 lb For $0.99 thru 02/09
- 1 cup seedless cucumbers, peeled, small dice
- 1 cup green onions, chopped
- 1 cup yellow peppers, small dice
- 1/4 cup red peppers, small dice
- 1/4 cup red onions, grilled, fine dice
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh chives, chopped
- 2-1/2 Tbsp. lemon zest, grated Safeway 4 ct For $5.00 thru 02/09
- 1/4 cup fresh lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1/2 tsp. crushed red pepper
- to taste salt and black pepper
- 1 cup KRAFT Golden Italian Dressing
- Combine all ingredients except dressing in large bowl.
- Cover and refrigerate until ready to serve.
- Add dressing; toss to coat.
- Serve chilled or at room temperature.
