Carrot Casserole(Microwave)

  1. In a 1 1/2-quart casserole, microcook carrots and water, covered on High for 6 to 8 minutes, stirring once; drain.
  2. Stir together mayonnaise, onion, horseradish, salt and pepper.
  3. Add to carrots in casserole and stir.
  4. In a bowl, toss together crushed crackers, butter and parsley.
  5. Sprinkle cracker mixture over carrots.
  6. Cook uncovered 3 minutes.
  7. Add cheese and cook 1 to 2 minutes or until cheese melts and mixture is heated through.
  8. Makes 6 to 8 servings.
