Yellow Rice

  1. In a large saucepan, heat olive oil over medium heat.
  2. Add onion and garlic; cook 3 minutes.
  3. Stir in rice and stir, 3 minutes.
  4. Add chicken stock and ground turmeric or annatto (achiote) and bring to a boil; cover, reduce heat to low, and cook 20 minutes.
  5. Stir in diced pimiento and salt; fluff with a fork.
  6. Remove from heat; leave covered.
  7. Fluff again before serving.
