Broiled Salmon With Cucumbers Recipe

  1. In a large nonstick frying pan over medium-high heat, combine the onions, vinegar, garlic, ginger and soy sauce.
  2. Bring to a boil, stir and cook for 3 min.
  3. Remove from heat.
  4. Add in the cucumbers.
  5. Set aside to cold.
  6. Rub the salmon on both sides with the oil.
  7. Broil about 6 inches from the heat for 4 to 5 min per side, or possibly till cooked through.
  8. Serve on a bed of rice topped with the cucumbers.
  9. This recipe yields 4 servings.
