Diet Chocolate Mint Pie Recipe

  1. In a small saucepan, sprinkle gelatin over water; let stand till softened, about 1 minute.
  2. Stir over low heat till gelatin is completely dissolved; cold slightly.
  3. In blender, combine lowfat milk, Alba, peppermint extract and gelatin.
  4. Process on low for 30 seconds, adding ice cubes one at a time.
  5. Process at highest speed till mix starts to thicken.
  6. Transfer to bowl, blend in 1/4 c. lite whipped topping.
  7. Spoon mix into prepared crust.
  8. Refrigeratetill set, about 4 hrs.
  9. Garnish each with remaining whipped topping.
  10. 6 servings, 130 calories.
