Quick Potato Casserole
- 1 pound hash brown potatoes frozen
- 1/2 teaspoon onion powder
- 1 cup sour cream
- 1 cup soup, cream of mushroom
- 1 cup cheddar cheese shredded
- 1 x parmesan, parmigiano-reggiano cheese, grated
- Mix all ingredients together except parmesan.
- Put into greased 9x13 casserole dish.
- Sprinkle parmesan over top, about 1/4 cup or so.
- Bake for 1 hour at 400F (200C).
- This can be doubled easily.
- Also can be prepared in advance and baked just before serving.
