Asian Meatballs & Fresh Bok choy
- 1 lb ground meat (beef,turkey or pork) I used lean beef in these
- 3 tbsp minced water chestnuts
- 1 Green onion, chopped
- 3 garlic cloves, minced
- 1/4 cup panko breadcrumbs
- 1 egg
- 1 tsp sambal (or red pepper flakes)
- 1 1/2 tsp grated fresh ginger
- 1 tsp lemongrass paste (optional)
- 1/3 cup Hoisin Sauce
- 2 tbsp soya sauce
- 2 garlic cloves, minced
- 1 1/4 tsp sesame oil
- 1 tsp sambal
- 1 1/2 tsp grated fresh ginger
- 1 1/2 tsp rice wine vinegar
- 1 lb Fresh Bok choy (I used Shanghai bok choy here)
- 1 garlic cloves, minced
- In a bowl, bring together meat mixture.
- Form into small balls and bake on baking sheet for 20 min @ 375AF.
- Then under the broiler for 5 min.
- While balls baking, whisk together sauce in sauce pan and just heat through.
- In a separate pan, heat 1 tsp oil with garlic and toss bok choy together for about 5 min until cooked (but crisp) Add salt and pepper to taste.
- Once balls are cooked you and dip each individually, or pour sauce over meatballs.
- Sprinkle with sesame seeds (optional)
