Raspberry and white chocolate muffins
- 2 eggs
- 1/3 cup canola oil or vegetable oil
- 1 cup cultured buttermilk
- 1 tsp vanilla essence
- 2 cup sifted self raising flour
- 1/2 cup caster sugar
- 1 cup white chocolate chips
- 1 cup frozen raspberries
- Preheat fan forced oven 170C.
- Place 12 muffin liners in a 12 tin muffin tray.
- In a bowl, combine eggs, oil, buttermilk, and vanilla.
- Add flour, sugar, and chocolate in the bowl and combine.
- Do not over mix.
- Mix in raspberries but don't let it melt too much.
- Spoon mixture in tray and bake in oven for 30 minutes.
