Tomato Catsup
- 1 gallon tomato juice
- 1 pint vinegar
- 2 tablespoons salt
- 1 cup sugar
- 1 teaspoon red pepper
- 1 teaspoon ground mustard
- 1 cinnamon stick
- 5 cloves
- 5 whole allspice
- 12 cup cornstarch
- take 1/2 bushel tomatoes cut up in small pieces.
- cook strain
- and to each gallon juice add 1 pint vinegar.
- 2 tablespoons salt.
- 1 small cup sugar.
- 1 level teasppon red pepper
- 1 heaping teaspoon ground mustard
- cinnamon cloves and allspice
- tie spices in cloth
- remove when done
- cooking 2 hours
- then add 1/2 cup cornstarch(this is where i think the recipe gets hinky , i think its 2 much cornstarch for each gallon
- and then cook 15 minutes more
- bottle and seal.
