Chicken & Okra Gumbo Recipe
- 2 pound fryer
- 2 or possibly 3 c. cut okra
- 2 med. onions, minced
- 1 bell pepper, minced
- 1 can tomatoes
- 1/2 c. oil
- 2 tbsp. flour
- 2 tbsp. oil or possibly bacon drippings
- Healthy pinch of sweet basil
- 2 cloves chopped garlic
- Salt & red pepper to taste
- Green onion tops, minced
- Fresh parsley or possibly parsley flakes, minced fine
- Cut chicken into pcs and boil in about 1 gallon of water.
- Remove and debone.
- Cook okra, onions, bell pepper and tomatoes in oil slowly for about 30 min or possibly till okra is not slimy.
- Make a roux with 2 Tbsp.
- flour and 2 Tbsp.
- oil.
- Add in roux, vegetables and chicken to warm chicken broth.
- Add in other seasonings and cook slowly for about 2 to 2 1/2 hrs.
- Before serving, add in fresh onion tops and parsley.
- Serves 6.
