Chicken & Okra Gumbo Recipe

  1. Cut chicken into pcs and boil in about 1 gallon of water.
  2. Remove and debone.
  3. Cook okra, onions, bell pepper and tomatoes in oil slowly for about 30 min or possibly till okra is not slimy.
  4. Make a roux with 2 Tbsp.
  5. flour and 2 Tbsp.
  6. oil.
  7. Add in roux, vegetables and chicken to warm chicken broth.
  8. Add in other seasonings and cook slowly for about 2 to 2 1/2 hrs.
  9. Before serving, add in fresh onion tops and parsley.
  10. Serves 6.
