New Potato and Chive Salad

  1. Cook the potatoes in boiling salted water until tender.
  2. Meanwhile chop the spring onions.
  3. Whisk together the oil, vinegar and mustard.
  4. Drain the potatoes well, then immediately toss lightly with the vinegar mixture and spring onions.
  5. Leave to cool.
  6. Stir the mayonnaise and chives into the potatoes and chill until ready to serve.
