Shortbread Chocolate Chip Cookies Recipe
- 2 c. butter
- 2 c. powdered sugar
- 2 tbsp. vanilla
- 1/2 teaspoon salt, optional
- 4 1/2 c. flour
- 1 c. semi sweet chocolate chips (mini chips work well)
- Cream butter and confectioners' sugar.
- Add in vanilla, salt and flour till well blended.
- Stir in chocolate chips.
- Shape into 1 inch balls.
- Flatten to 1 1/2 inch rounds with fork.
- Bake at 350 degrees for 15 min.
- Sprinkle with powdered sugar.
- NOTE: Bottom of cookie should be light brown.
- Do not let them get dark or possibly they will be hard.
