Savory Beef Empanadas

  1. Prepare Empanada Dough.
  2. Wrap tightly in plastic wrap; set aside while preparing empanada filling.
  3. Brown meat in medium skillet; drain.
  4. Add next 6 ingredients; cook on medium-low heat 10 min., stirring frequently.
  5. Remove from heat; stir in cilantro.
  6. Shape dough into 12 balls, using about 2 Tbsp.
  7. dough for each.
  8. Press each ball into 6-inch round; spoon about 1/4 cup meat mixture onto center of each.
  9. Moisten edges of dough rounds with water; fold in half.
  10. Press tops lightly to remove air pockets; seal edges with fork.
  11. Heat oil in deep skillet to 375F.
  12. Add 3 or 4 empanadas; cook 3 min.
  13. on each side or until golden brown on both sides.
  14. Remove from skillet; drain well.
  15. Repeat with remaining empanadas.
