Marshmallow Pecan Squash Dish
- 2 (1 lb) acorn squash
- 13 cup salted cracker crumb
- 14 cup chopped pecans
- 3 tablespoons butter, melted
- 1 tablespoon brown sugar
- 18 teaspoon ground nutmeg
- 1 cup mini marshmallows
- Halve squash; remove and discard seeds & fibers.
- Place squash, cut side up, in a 1"' x 7" x 2" baking dish.
- Combine cracker crumbs, pecans, 2 tablespoons butter, brown sugar, and nutmeg.
- Brush squash with remaining butter.
- Spoon 1/4th of the nut mixture into each squash half.
- Bake, covered, in a 400 degree oven 50-55 minute
- Uncover baking dish, top each squash half with 1/4 c marshmallows.
- Bake 4-5 minute till marshmallows are golden.
- Serve.
